The Owner and winemaker Zeno Zignoli talks us about the winemaking of his the wines: Ripasso and Amarone della Valpolicella. Ripasso wine makes a second fermentation on Amarone pressed grapes which gives him a deeper structure and taste while Amarone is the king of the production: grapes wither for 3 months after the harvest to concentrate flavour and sugars. He produces only 4 to 6000 bottles per year. In conclusion he talks about what “organic farming “ means to him.
